Here it is… did I follow my 30 day plan to eat a salad for a meal once a day?
I can proudly say that I did – for the most part. I ate a salad for a meal for 30 days, minus four days, and you know what? I think that’s pretty dang good! Despite all the obstacles that were thrown at me during the first month of the New Year, and there were A LOT, I feel quite accomplished.
I know now that I still have motivation and determination to accomplish a goal once I’ve set my sights on it. Sure it’s hard work, but I learned along the way that sometimes saying “no” is just as satisfying as saying “yes”.
I wish I could say that I continued this plan on through February, but sadly, I have not. These obstacles that I mentioned earlier are what kind of threw me off my path. Though, I know that it’s easy enough as just preparing a salad or asking for one when I’m out, that I hope to start this habit again soon and continue on my path of a healthy lifestyle.
Also I had planned on creating this really cool montage of salads that I ate during this challenge. I took a few photos, then got thrown off by said obstacles, but I mostly just forgot to before I ate them.
